Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the soup as it cooks, turning it clear and slightly viscous.
Milk and cream
Adds richness and a smooth, creamy body to the finished soup.
Stock
Forms the savory liquid base that the other ingredients are cooked in.

The step that matters

Stir in the tapioca until it becomes transparent. Tapioca starch must be stirred in and cooked fully to gelatinize; undercooked starch leaves a cloudy, grainy texture and little thickening.

Swap the onion

How well each one fits the dish's main ingredients (milk, cream, celery, pepper, ham):

  1. Carrotfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against milk, cream, celery, pepper, ham. Candidates are from the same food group and used in at least 100 recipes.
