Horseradish Sauce

Ingredients

Directions

  1. Grate the horseradish as finely as possible.

  2. In a bowl, combine the grated horseradish, salt, vinegar, cream, mustard, caster sugar, and cayenne vinegar, then blend well, adding the vinegar last for a milder flavor.

  3. Adjust sweetness by increasing sugar or reducing mustard if desired.

  4. For a less expensive version, substitute milk for cream and add 1 teaspoon of sweetened condensed milk.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Horseradish (in the method)
Provides the sharp, pungent heat that defines the sauce.
Cream
Adds moisture and richness, softening the sharpness of the horseradish.
Vinegar
Adds acidity that brightens the flavor and balances the cream.
Mustard
Adds a sharp, savory note that complements the horseradish.
Caster sugar
Adds sweetness that balances the heat and acidity.

The step that matters

Adding the vinegar last. Vinegar added late keeps its sharpness from fading during blending and gives a milder flavor, as the record notes. Adding it early can make the heat and acid harsher and harder to balance.

Swap the radish

How well each one fits the dish's main ingredients (horse, vinegar, cream, mustard, sugar):

  1. Radishthe original
  2. Horseradishfits about as well
  3. Beetrootfits less well
  4. Broccolifits less well

Fit is the average pairing score against horse, vinegar, cream, mustard, sugar. Candidates are from the same food group and used in at least 100 recipes.
