Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Scallops, Scalloped

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Open the scallops and remove them from their shells, trimming away the black parts.

  2. Rinse the scallops in water with a drop of lemon juice, then drain and dry them.

Assemble

  1. Mix the scallops with bread crumbs, chopped parsley, salt, pepper, and melted butter or white sauce.

  2. Butter the insides of the deep shells and sprinkle with bread crumbs.

  3. Fill the shells with the scallop mixture, level the surface, and squeeze a little lemon juice on top.

  4. Dredge with more bread crumbs and pour clarified butter over the top.

Bake

  1. Bake in a 350°F (175°C) oven until brown.

What each ingredient does

Scallops
The main ingredient, forming the filling that cooks through inside the shells.
Bread crumbs
Coat the surface and crisp and brown in the oven, adding texture.
Butter
Adds richness and moisture, and helps the topping brown.
Lemon juice
Adds a bright acidity that balances the rich butter and sweet scallops.

The step that matters

Baking until brown. Scallops are delicate protein and turn tough and rubbery when overcooked. Bake only until the topping browns and the scallops turn opaque, checking early.
