Veal Escalopes with Celery Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble

  1. Spread celery sauce on the cooked veal slices.

  2. If any stuffing remains, mince it and mix with the sauce for added flavor.

  3. If no stuffing is available, add a pinch of sweet herbs and minced cooked bacon.

  4. Cook and plate as directed, placing a mound of celery in the center.

Top and brown

  1. Cover with thick béchamel, smooth it, and sprinkle with grated Parmesan and breadcrumbs.

  2. Add butter on top and brown in the oven at 400°F (200°C) or under a salamander, or in front of a clear fire for a minute.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked veal
Forms the tender base that the sauces and toppings are layered over.
Celery sauce
Adds moisture and savory celery flavor under the cheese and crumb topping.
Thick béchamel sauce
Provides a creamy, rich layer that keeps the topping moist during browning.
Grated parmesan cheese
Melts and browns on the surface, adding savory flavor and golden color.
Bread crumbs
Forms a crisp, golden crust over the sauce when browned.
Butter
Adds fat that helps the crumbs and cheese brown evenly and richly.

The step that matters

Browning the top in the oven. Browning must happen quickly and at high heat so the crumbs and cheese turn golden before the veal and sauce overcook. Too little heat leaves the top pale, while too long dries the meat.
