What each ingredient does

Mutton
Provides the meat that becomes tender during long, slow simmering in the sauce.
Onion
Browns to build sweetness and savoury depth as the base of the curry.
Curry powder
Supplies the spice flavour, bloomed in fat and stock to form a paste.
Butter
Carries the spices and browns the onion, adding richness to the sauce.
Coconut infusion
Adds moisture and mild coconut flavour to the cooking liquid.

The step that matters

Brown the onion well. Deeply browned onion gives the curry its sweet, savoury base. Pale onion leaves the sauce flat, while over-darkened onion turns bitter.
