What each ingredient does

Bread
Forms the bulk of the forcemeat and, soaked as a panada, gives it a light, moist body.
Veal kidney suet
Adds fat that keeps the forcemeat moist and tender once cooked.
Egg
Binds the mixture so it holds its shape when cooked.
Cream
Adds moisture that keeps the forcemeat soft and loosens the mixture.
