Directions

Prepare the dressing

  1. In a bowl, mash the yolks of 3 hard-boiled eggs with 3 boneless sardines.

  2. Add 2 tablespoons of oil, 2 tablespoons of French vinegar, nutmeg, white pepper, and coralline pepper; mix well.

Assemble the salad

  1. Place ½ pound of flaked cooked white fish in a salad bowl; season with salt, pepper, oil, and vinegar.

  2. Layer 4 halved sardines over the fish, then sprinkle with chopped gherkins or capers.

What each ingredient does

Hard-boiled egg yolks
Mashed into the dressing, they add richness and a creamy body.
Sardines
Provide the savoury, oily flavour that defines the salad.
White fish
Forms the flaked base of the salad, giving it bulk and a mild flavour.
Oil
Adds fat and moisture, carrying flavour through the dressing and fish.
French vinegar
Adds acidity that brightens the rich fish and egg flavours.

The step that matters

Mashing the yolks into the dressing. Yolks must be mashed smooth with the sardines before the oil and vinegar are added. Adding the oil and vinegar too early can leave the yolk grainy, so the dressing does not emulsify and stays separated.

Flavor stand-ins for the white pepper

How well each one fits the dish's main ingredients (egg, vinegar, nutmeg, pepper, fish, capers, lettuce):

  2. Parsleybetter flavor fit
  3. Dillbetter flavor fit
  4. White pepperthe original

Fit is the average pairing score against egg, vinegar, nutmeg, pepper, fish, capers, lettuce. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
