Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 7,874 recipes mention both. Both carry estragole, which smells anise, licorice. The science ↓

Giblet Pie

Ingredients

Directions

Prepare the giblets

  1. Wash the giblets in warm water until clean.

  2. Remove the gall from the liver and cut it and the heart in half.

  3. Soak the head in hot water and chop off the beak.

  4. Skin the feet and gizzard, cutting the feet and pinions in half, and the neck and gizzard into quarters.

  5. Place all giblets in a saucepan, cover with cold water, and bring to a boil.

  6. Drain the water, rinse the giblets, and cover with stock.

Cook the filling

  1. Add peppercorns, clove, allspice, herbs, and sliced onion.

  2. Cook slowly until the giblets are tender, about 1.5 to 3 hours depending on the age of the goose.

  3. Separately, stew the beef steak in stock until tender, then cut it up and mix with the giblets.

Bake and serve

  1. Fill the pastry with the mixture, cover, and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Giblets
Provide the main meaty filling, becoming tender and flavourful through slow simmering.
Beef steak
Adds extra meat texture and richness to the filling after stewing until tender.
Stock
Moistens the filling and carries flavour from the spices and onion into the meat.
Pastry
Encloses the filling and browns in the oven to form the crust.

The step that matters

Cook slowly until the giblets are tender. Giblets, especially from older birds, have tough connective tissue that needs long, gentle simmering to soften. Rapid boiling toughens muscle proteins and can leave the filling chewy, so keep the liquid at a low simmer and check tenderness rather than relying on the stated time alone.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (thyme, parsley, pepper, beef, clove, allspice):

  1. Carrotbetter flavor fit
  2. Shallotbetter flavor fit
  3. Parsnipbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against thyme, parsley, pepper, beef, clove, allspice. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
