Jellies, Creams, and Blancmanges

Ingredients

Directions

  1. Soak the gelatine in cold milk.

  2. Place the cup or basin with gelatine into a saucepan of water over heat and stir until dissolved.

  3. Cool the milk mixture slightly before adding whipped cream.

  4. If using jam, heat it and rub through a sieve before adding to the mixture gradually, beating well.

  5. If using fruit jelly, add it directly without sieving.

  6. Add sugar sparingly, if needed.

  7. For volatile flavorings, add just before pouring into the mold.

  8. Optionally, coat the inside of the mold with pure salad oil for a shiny finish.
