Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ginger Syrup

Ingredients

Directions

Make the syrup

  1. Boil the water and ginger until the liquid is reduced by half.

  2. Simmer gently to extract the goodness from the ginger.

  3. Strain the mixture, add the sugar, and boil again, skimming off any scum.

Bottle

  1. Once cooled, bottle for use.

  2. Optionally, add a little essence of lemon before bottling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ginger
Provides the main aroma and spicy flavour that the syrup is built on.
Lump sugar
Sweetens the liquid and thickens it into a syrup as it boils down.
Water
Acts as the solvent that draws flavour out of the ginger.

The step that matters

Skimming during the second boil. Scum rising after the sugar is added can cloud the syrup and spoil its clarity. Removing it as it forms keeps the finished syrup clear and clean-tasting.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
