Why it works: Parsley and thyme match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,057 recipes. Both carry cuminaldehyde, which smells Spicy, cumin. The science ↓
Clear Ox-tail Soup
Ingredients
Directions
Prepare the stock
Cut the ox-tail into short lengths.
Cover the ox-tail with cold water and add a little coarse sea salt.
Bring to a boil, then strain.
Return the ox-tail to the saucepan with the vegetables, bouquet garni, and seasonings.
Simmer gently for about 4 hours, keeping the saucepan covered.
Strain the soup and set the meat aside.
Let the stock cool to remove the fat.
Clarify and serve
Clarify the stock with the egg white and shell, then strain again.
Reheat the clarified stock.
Serve garnished with pieces of the ox-tail and some carrot and turnip cut into fancy shapes.
Optionally add a glass of sherry.
Optionally add a tablespoon of arrowroot mixed with a little stock for a slightly thickened soup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Ox-tail
- Gives the stock its body and rich meaty flavour as it simmers for hours.
- Egg white and shell
- Coagulates as it heats and collects impurities, leaving the stock clear.
- Arrowroot (in the method)
- Starch that thickens the soup slightly when heated in the stock.
The step that matters
Let the stock cool to remove the fat. Fat floats and sets as the stock cools, so it can be lifted off cleanly. Skipping this leaves greasy droplets that cloud the soup and spoil the clarification.
Swap the mace
How well each one fits the dish's main ingredients (carrot, turnip, onion, celery, parsley, thyme, clove):
- Marjoramfits better
- Winter savoryfits better
- Allspicefits better
- Macethe original
Fit is the average pairing score against carrot, turnip, onion, celery, parsley, thyme, clove. Candidates are from the same food group and used in at least 100 recipes.
