What each ingredient does

Carp
Forms the main body of the dish, becoming tender as it simmers gently in the sauce.
Flour
Thickens the stock into a smooth sauce when kneaded with butter and simmered.
Butter or good fat
Adds richness and carries flavour, and browns the onions when fried.
Onions
Frying them until brown adds sweetness and savoury depth to the sauce.
Mushrooms
Add earthy flavour and moisture to the sauce, and serve as a garnish.

The step that matters

Simmer the fish gently. Fish proteins toughen and break apart when boiled hard, so a gentle simmer keeps the slices firm and intact while they cook through.

Swap the onion
