Mackerel, Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the mackerel and remove the roes.

  2. Stuff the mackerel with the forcemeat and sew up the opening.

Bake and serve

  1. Place the mackerel and roes in a baking dish.

  2. Add the sweet dripping, then dredge with flour.

  3. Sprinkle with salt and pepper.

  4. Bake at 400°F (200°C) for 30 to 40 minutes, basting occasionally.

  5. Serve with parsley sauce or melted butter mixed with lemon juice and chopped parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mackerel
Forms the main body of the dish and carries the stuffing and flavour while cooking.
Veal forcemeat
Fills the fish cavity, adding richness and moisture as it cooks.
Sweet dripping
Adds fat that helps the surface brown and keeps the fish from drying out.
Flour
Dredging coat that helps the surface brown and gives a slightly crisp exterior.

The step that matters

Basting during baking. Fish is lean and dries out quickly in the oven. Regular basting with the fat in the dish keeps the surface moist and helps it brown evenly.
