What each ingredient does

Prawns
Provide the main protein, cooking gently in the sauce until just hot.
Butter or good fat
Fries the onion and spices, carrying their aroma and giving the sauce richness.
Curry powder
Supplies the spiced, aromatic flavour that defines the dish.
Flour
Cooked with the fat and curry powder to thicken the sauce.
Sour apple
Adds acidity and a fruity tang that balances the spices.
Stock
Forms the liquid base of the sauce, which simmers and thickens as it reduces.

The step that matters

Fry the curry powder and flour slowly. Frying the spices and flour gently in fat cooks out raw starch and toasts the spices for depth of flavour. Rushing this over high heat can scorch the flour and leave a bitter, raw taste.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, apple, coconut, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against butter, flour, apple, coconut, lemon. Candidates are from the same food group and used in at least 100 recipes.
