Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Scallops in Shells

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Trim the scallops by removing the beards and black parts.

  2. Clean 6 shells and grease them, then sprinkle a few breadcrumbs inside each shell.

Assemble and bake

  1. Place 2 scallops in each shell, season with cayenne, chopped parsley, and lemon juice.

  2. Mix pepper and salt with the breadcrumbs, cover the scallops with white sauce, and sprinkle more breadcrumbs on top.

  3. Dot with small pieces of butter and bake at 400°F (200°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Scallops
Form the main body of the dish and cook through in the oven, becoming tender and opaque.
Breadcrumbs
Form a crisp, golden topping and absorb moisture in the shell.
Butter
Adds richness and helps the breadcrumb topping brown in the oven.
White sauce
Keeps the scallops moist and binds the dish with a creamy texture.

The step that matters

Bake at 400°F (200°C) for about 20 minutes. Scallops are delicate and overcooking makes them tough and rubbery, so watch them closely while the topping browns.
