Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Potato Pasty

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Make the pastry dough and roll it out into a round shape.

  2. In a bowl, mix the beef, potatoes, and onion. Season the mixture with pepper and salt.

  3. Moisten the mixture with gravy or water.

Assemble and bake

  1. Place the meat mixture on one half of the pastry. Wet the edges with water.

  2. Fold the other half of the pastry over the filling and seal the edges securely. Prick the top of the pastry.

  3. Bake in a moderate oven at 350°F (175°C) for about 50 to 60 minutes. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry dough
Encloses the filling and bakes into a crisp, golden casing.
Raw lean beef
Provides the main meat flavor and becomes tender as the pasty bakes.
Parboiled potatoes
Adds bulk and a soft, starchy texture to the filling.
Onion
Adds savory sweetness and aroma to the filling.

The step that matters

Seal the edges securely. If the seal is weak, juices and steam escape during baking and the filling can leak out, leaving the pasty dry and the crust soggy where it escapes.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, pepper):

  1. Capsicumfits about as well
  2. Tomatofits about as well
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
