Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's sweetbread
Main protein; gently cooked to become tender and delicate in texture.
Stock
Braising liquid that keeps the sweetbread and vegetables moist during gentle cooking.
Fried bread
Golden, crisp base that supports the sweetbread and adds contrast in texture.
Gravy or tomato sauce
Sauce served around the sweetbread that adds moisture and savory flavor.

The step that matters

Cook gently for about 30 minutes. Gentle simmering in covered liquid keeps the delicate sweetbread tender and moist; vigorous boiling would toughen its proteins and dry the surface.
