Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Provides the main meat and, through the bone, rich gelatin that gives the broth body.
Rice
Added late to thicken the broth slightly as its starch releases during simmering.
Onion
Adds savoury sweetness and aroma to the broth as it softens during simmering.
Carrot
Contributes gentle sweetness and colour to the broth.

The step that matters

Skimming the foam. Foam rising at the start contains coagulated proteins and impurities; skimming it early keeps the broth clear and clean-tasting rather than cloudy or scummy.

Swap the onion

How well each one fits the dish's main ingredients (veal, ham, rice, carrot, turnip, celery, pepper):

  1. Leekfits better
  2. Parsnipfits better
