  2. Roll the meat tightly in a cloth and bind it with broad tape.

Cook and press

What each ingredient does

Beef
Provides the meat that is cured, cooked, and sliced for serving.
Sugar
Balances the salt and adds mild sweetness to the cured meat.
Salt
Draws out moisture and seasons the meat during the curing period.
Saltpetre
Helps the meat keep its pink colour during curing.
Allspice
Adds a warm, aromatic flavour to the seasoning.

The step that matters

Boil gently for about 6 hours. Gentle simmering keeps the meat tender and prevents the outside from toughening. A hard boil can break down the surface and make the texture stringy.
