Stewed Lamb

Ingredients

Directions

Prepare

  1. Saw the long bones across and skewer or bind the meat into a compact form.

  2. Heat the butter in a large stewpan.

  3. Add the pepper, mint, and lemon juice, then add the meat.

Stew

  1. Cover closely and cook very gently for about 1 hour, turning the meat two or three times to brown the entire surface.

Finish and serve

  1. Serve the Soubise sauce separately, or add ⅓ cup of stock mixed with 1 teaspoon of flour to the stewpan.

  2. Boil for a few minutes, season to taste, and improve the color if necessary by adding a few drops of liquid caramel.

  3. Dish up and serve hot.

What each ingredient does

Lamb
Provides the meat that becomes tender during long, gentle stewing.
Butter
Adds fat and richness, helping the meat take on color in the pan.
Lemon juice
Adds acidity that brightens the flavor of the rich meat.
Flour (in the method)
Thickens the stock into a light sauce when boiled in the stewpan.

The step that matters

Cooking very gently with the lid closed. Low, covered heat breaks down the connective tissue in the lamb slowly, making it tender without drying or toughening the meat. Turning it lets the surface brown evenly.

Swap the mint

How well each one fits the dish's main ingredients (lamb, butter, lemon, pepper, sauce):

  1. Parsleyfits better
