Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender through slow, covered simmering in the sauce.
Butter or good fat
Carries flavour and browns the chicken and onion at the start of cooking.
Flour
Thickens the stock into a smooth sauce that coats the chicken.
White stock
Forms the liquid base of the sauce and carries the curry flavours.
Cream or milk
Adds richness and a softer, rounder texture to the finished sauce.

The step that matters

Stirring the flour and curry powder into the onion. Cooking the flour for a few minutes removes its raw taste and lets it thicken the stock smoothly. Adding stock too early or skipping this step can leave lumps and a floury flavour.

Swap the apple
