Why it works: Pistachio and nuts match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 425 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓
Fowl Galantine
Ingredients
Directions
Prepare the fowl
Bone the fowl and cut it down the center of the back.
Spread it out on a table and season the flesh well.
Distribute the meat evenly to ensure all parts are of equal thickness.
Spread half of the sausage meat on the fowl.
Place narrow strips of bacon, slices of egg, slices of truffle, and intersperse the nuts on top.
Season liberally with salt and pepper, then cover with the remaining sausage meat.
Roll up tightly and secure in a cloth.
Cook and press
Simmer gently in stock for about 2 hours.
When cooked, tighten the cloth and press between two boards or dishes until cold.
Glaze and serve
Before serving, glaze thickly and garnish with aspic jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sausage meat
- Forms a moist, savoury filling that binds the layers together as it cooks.
- Fowl
- Provides the main body of lean meat that is rolled, cooked and sliced.
- Ham or bacon
- Adds salty, smoky fat that flavours the filling and keeps the lean meat moist.
- Hard-boiled eggs
- Give a firm, pale contrast in the slices when the roll is cut.
- Truffles
- Contribute a strong, earthy aroma that perfumes the whole galantine.
The step that matters
Rolling and pressing the galantine. The roll must be tight and evenly thick so it cooks uniformly and holds a neat shape. Pressing while cooling squeezes out excess liquid and sets the meat firmly, so slices stay compact.
Swap the nuts
How well each one fits the dish's main ingredients (meat, ham, egg, truffle, pistachio, pepper):
- Walnutfits better
- Chestnutfits better
- Almondfits better
- Nutsthe original
Fit is the average pairing score against meat, ham, egg, truffle, pistachio, pepper. Candidates are from the same food group and used in at least 100 recipes.
