Blackcock, Roast

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Hang the blackcock for a few days to improve flavor.

  2. Pluck and draw the bird, wiping the insides and outsides with a damp cloth.

  3. Cut off the head, truss the bird like a roast fowl, and remove the toes. Scald and peel the feet.

Roast and serve

  1. Baste the bird with hot fat.

  2. Roast in a 350°F (175°C) oven for 45 to 60 minutes, basting frequently.

  3. Serve on a slice of buttered toast with gravy, bread sauce, and fried breadcrumbs on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Blackcock
The main bird, whose flavor is developed by hanging before cooking.
Butter or good dripping
Fat for basting, carrying heat over the surface and helping it brown and stay moist.
Toast
Serves as a base under the bird, soaking up juices and adding a buttery, toasted flavor.
Bread sauce
Adds a soft, moist, mildly sweet accompaniment that contrasts with the roasted meat.

The step that matters

Basting with hot fat. Hot fat spooned over the bird during roasting transfers heat to the surface, helping it brown and keeping the meat from drying out in the oven.
