Raised Pie

Ingredients

Directions

  1. Mix the veal and pork together, seasoning liberally with coarse sea salt and black pepper, and add 1-2 tablespoons of chopped truffle.

  2. Divide the game birds into neat joints, removing all bones except those deeply embedded in the flesh.

  3. Make and mold the paste, lining the bottom and sides with veal force-meat.

  4. Place the prepared game inside, seasoning each layer with salt and pepper, and intersperse small pieces of the meat farce, leaving spaces for stock.

  5. Pile the game high in the center, cover with a thin layer of veal farce, and place the cover on top.
