  3. Stir in the flour and cook for a minute.

  3. Heat through and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast wild duck remains
Provides the meat and flavour that the sauce is built around.
Butter
Enriches the base and carries flavour when melted with the onion.
Flour
Thickens the stock into a smooth, lightly bodied sauce.
Stock
Forms the liquid base and adds savoury depth from the game bones.
Onion
Adds sweetness and aroma as it softens in the butter.

The step that matters

Stir the stock into the flour mixture gradually. Adding stock slowly while stirring constantly lets the flour disperse evenly, which prevents lumps and gives a smooth, properly thickened sauce.
