Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Beef, Baked

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove bones and brown parts from the beef, simmer for at least 2 hours, strain, season, and set aside as gravy.

  2. Slice the beef thinly and chop the vegetables into very thin slices.

Assemble

  1. Spread a thin layer of mashed potatoes in a pie dish, layer with beef, carrots, onions, herbs, and season with salt and pepper.

  2. Repeat layers until the dish is full, then pour in gravy until it reaches the top.

  3. Cover with remaining mashed potatoes, smoothing the surface with a knife.

  4. Optionally brush the top with beaten egg or milk for a better appearance.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) for about 30 minutes until browned.

  2. Serve remaining gravy separately.

What each ingredient does

Cold roast beef
Forms the meaty body of the casserole and carries its savory flavor.
Mashed potatoes
Form the top crust and layers, adding moisture and a soft texture that browns in the oven.
Gravy
Supplies moisture that keeps the beef and layers from drying out during baking.
Onions
Add sweetness and aroma as they soften between the layers.
Carrots
Add natural sweetness and a tender texture between the layers.

The step that matters

Pouring in the gravy to the top. The gravy must fill the gaps so the layers stay moist during baking; without enough liquid, the beef can dry out and the casserole can turn dense.

Swap the onion
