Why it works: Chervil and endive share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 75 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Chicken Mayonnaise

Ingredients

Directions

Prepare the chicken

  1. Cut the chicken into small joints, removing all skin and ends of bones.

  2. Shape the chicken pieces neatly.

Coat and set

  1. Dissolve the aspic jelly; when cool, mix it with the mayonnaise sauce.

  2. Place the chicken pieces on a wire tray and carefully pour the sauce over them using a tablespoon.

  3. Once the sauce is set, decorate with truffle and chervil, then mask with a thin layer of liquid aspic.

Serve

  1. Arrange the chicken on a dish over a bed of dressed salad.

  2. Garnish with sprigs of endive, slices of cucumber, and pieces of aspic jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, providing the substantial meat that the coating surrounds.
Mayonnaise sauce
Provides a rich, creamy coating that gives the chicken moisture and a smooth texture.
Aspic jelly
Sets into a clear gel that holds the coating in place and adds a glossy finish.

The step that matters

Pour the sauce over the chicken once it is cool. The aspic must be cool but still liquid so it thickens into an even coating. If it is too hot, it thins and runs off; if it has set, it will not spread smoothly.

Swap the cucumber

How well each one fits the dish's main ingredients (chicken, sauce, truffle, chervil, endive):

  1. Shallotfits better
  2. Chivefits better
  3. Lettucefits better
  4. Cucumberthe original

Fit is the average pairing score against chicken, sauce, truffle, chervil, endive. Candidates are from the same food group and used in at least 100 recipes.
