What each ingredient does

White fish
Forms the main body of the pudding, giving it its soft, sliceable structure when cooked.
Eggs
Bind the mixture and set when steamed, holding the pudding together.
Suet
Adds fat that keeps the fish moist and tender during steaming.
Breadcrumbs
Absorb liquid and add body, helping the pudding hold its shape.
Milk or fish stock
Adds moisture that keeps the mixture loose and tender as it sets.

The step that matters

Steam gently for nearly 2 hours. Gentle steaming lets the egg set slowly and evenly. Boiling vigorously can make the egg proteins tighten too fast, producing a rough, rubbery or watery texture.

Swap the parsley

How well each one fits the dish's main ingredients (fish, milk, egg, anchovy, pepper):

  1. Parsleythe original
  2. Capersfits about as well
  3. Nutmegfits less well
  4. Tarragonfits less well

Fit is the average pairing score against fish, milk, egg, anchovy, pepper. Candidates are from the same food group and used in at least 100 recipes.
