Directions

Prepare the pork

Make the sauce

  1. Add the onion to the fat in the pan and fry until browned.

  2. Sprinkle in the flour, season with salt and pepper, and cook for a few more minutes to lightly brown the flour.

  3. Add the stock, vinegar, and mustard, and bring to a boil.

Serve

  1. Pour the mixture over the cutlets arranged in a close circle on a hot dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Remains of cold loin of pork
Forms the main body of the hash, providing meaty flavour and substance.
Butter or good fat
Carries heat for browning the cutlets and onion, adding richness and flavour.
Spanish onion
Softens and browns in the fat, adding sweetness and savoury depth to the sauce.
Flour
Browns lightly in the pan fat and thickens the gravy as it cooks.
Good gravy
Provides the liquid base of the sauce and carries the savoury flavour over the pork.

The step that matters

Lightly browning the flour. Cooking the flour in the fat for a few minutes removes its raw taste and helps it thicken the liquid smoothly. Adding the liquid too early or leaving the flour raw can leave lumps and a pasty flavour.

Swap the onion

How well each one fits the dish's main ingredients (pork, butter, flour, vinegar, mustard, pepper):

  1. Shallotfits better
  2. Lettucefits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against pork, butter, flour, vinegar, mustard, pepper. Candidates are from the same food group and used in at least 100 recipes.
