What each ingredient does

Red cabbage
Forms the bulk of the dish and softens into tender strands during slow stewing.
Butter
Adds richness and a silky mouthfeel to the cabbage as it cooks.
Vinegar
Adds acidity that brightens the flavor and helps the cabbage keep its purple color.
Pounded sugar
Balances the sharpness of the vinegar with a touch of sweetness.
Stock
Provides moisture for stewing and carries flavor into the cabbage.

The step that matters

Stir over heat until most of the liquid has evaporated. Reducing the liquid concentrates flavor and prevents a watery finish. Stirring keeps the cabbage from scorching on the bottom of the pan.
