Directions

The book says “a moderately hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  2. Line 9 or 10 patty pans with short-crust paste.

  3. Spread about ½ teaspoon of jam on the bottom of each patty pan.

Make the filling

  1. Beat the egg and gradually mix it with the cornflour until smooth.

  2. Add the sugar, ground almonds, melted butter, and a pinch of nutmeg.

  3. Fill each pan with the almond mixture.

Bake

  1. Bake for 20 to 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground almonds
Provide the main body and nutty flavour of the almond filling.
Egg
Binds the filling and helps it set as it bakes.
Cornflour
Thickens the mixture so it holds its shape when baked.
Castor sugar
Sweetens the filling and helps it brown lightly in the oven.
Butter
Adds richness and moisture to the almond filling.

The step that matters

Beat the egg into the cornflour until smooth. Adding the egg gradually and mixing until smooth prevents lumps of cornflour, which would leave pockets of raw starch and an uneven texture in the baked filling.
