Semolina Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Combine the milk, a pinch of salt, and the bay leaf in a saucepan.

  2. Bring the mixture to a boil.

  3. Gradually sprinkle in the semolina while stirring.

  4. Cook gently for about 10 minutes, stirring continuously.

  5. Remove the saucepan from heat.

  6. Cool the mixture slightly.

  7. Take out the bay leaf.

Finish and bake

  1. Stir in the sugar and the egg yolks.

  2. Fold in the stiffly whisked egg whites.

  3. Pour the mixture into a greased pie dish.

  4. Bake at 350°F (175°C) for 25 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Semolina
Thickens the milk into a soft, set pudding as it cooks.
Eggs
Egg whites add lightness and rise, while yolks enrich the custard and help it set.
Milk
Forms the liquid base that the semolina swells in and sets.
Moist sugar
Adds sweetness and a soft, moist texture to the pudding.

The step that matters

Fold in the stiffly whisked egg whites. Whites hold air only when whisked stiff and folded gently; overmixing knocks the air out, so the pudding bakes flat and dense instead of light.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
