Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving it structure and a tender body.
Milk
Provides the liquid base and creamy richness that the eggs set into custard.
Sugar
Adds sweetness and balances the coffee flavour.

The step that matters

Pouring the hot milk over the beaten eggs. Adding hot milk slowly while stirring constantly gradually warms the eggs. Pouring too fast can scramble them, leaving a grainy texture instead of a smooth custard.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
