Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the rice cooks in and gives the dessert its body.
Cream
Whipped into the mixture to make it light, soft and rich.
Ground rice
Its starch swells as it simmers, thickening the base.
Caster sugar
Sweetens the base and balances the flavor.
Gelatine
Sets the mixture so it holds its shape when chilled.

The step that matters

Fold in the whipped cream when the base is cool. If the base is still hot, the cream can melt and lose its whipped air, leaving a dense texture. Folding gently rather than stirring keeps the air bubbles intact, so the dessert stays light.
