What each ingredient does

Lemons
Provide the sharp acidity and bright lemon aroma that define the water ice.
Oranges
Add citrus juice and peel oils for extra sweetness and aroma alongside the lemons.
Syrup
Supplies sugar that sweetens the ice and keeps it softer when frozen.

The step that matters

Steeping the peel in hot syrup. Hot syrup draws aromatic oils out of the peel far better than cold liquid. Covering the basin keeps those volatile oils from escaping, so the flavour carries into the finished ice.

Swap the orange

How well each one fits the dish's main ingredients (syrup, lemon):

  1. Orangethe original
  2. Limefits about as well
  3. Raspberryfits less well
  4. Vanillafits less well

Fit is the average pairing score against syrup, lemon. Candidates are from the same food group and used in at least 100 recipes.
