Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the macaroni

  1. Break the macaroni into small pieces.

  2. Boil in slightly salted rapidly boiling water until tender.

  3. Drain the macaroni well.

Make the sauce

  1. Melt the butter in a saucepan.

  2. Stir in the flour.

  3. Add the milk.

  4. Bring to a boil, stirring continuously.

  5. Add the macaroni, cheese, mustard, salt, and pepper.

  6. Mix well.

Bake and serve

  1. Transfer the mixture to a greased fireproof dish.

  2. Sprinkle with brown breadcrumbs and grated cheese.

  3. Dot with small pieces of butter.

  4. Bake in a 400°F (200°C) oven until nicely browned.

What each ingredient does

Macaroni
Forms the bulk and body of the dish, holding the sauce in every bite.
Cheese
Melts into the sauce to add rich flavor and creamy texture, and browns on top.
Butter
Adds richness and flavor to the sauce and helps the top brown.
Flour
Thickens the butter and milk into a smooth sauce that clings to the pasta.
Milk
Forms the liquid base of the sauce, giving it a creamy, smooth body.
Made mustard
Adds a sharp note that balances the richness of the cheese and sauce.

The step that matters

Bring the sauce to a boil while stirring continuously. Flour thickens milk only when it boils, and constant stirring prevents lumps. Stopping early leaves a thin sauce, and letting it scorch on the base of the pan gives a burnt taste.

Swap the mustard

How well each one fits the dish's main ingredients (cheese, butter, flour, milk, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Asparagusfits about as well
  4. Mustardthe original

Fit is the average pairing score against cheese, butter, flour, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
