Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the marrow

  1. Soak the marrow in tepid water for about 2 hours.

  2. Cut the soaked marrow into 1-inch lengths and place them in cold water.

  3. Bring the water to a rapid boil, then drain the marrow well.

Assemble and bake

  1. Prepare squares of very hot, well-buttered toast.

  2. Place the drained marrow on the toast, breaking it up and spreading it with a fork.

  3. Season with salt and pepper.

  4. Place the toast in a hot oven (400 °F / 200 °C) until the marrow is thoroughly melted.

Serve

  1. Serve immediately, optionally sprinkling with chopped parsley, chives, and lemon juice before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Marrow
Melts into the toast, adding richness and a soft, spreadable texture.
Butter
Adds fat and flavor and helps the toast stay moist under the marrow.
Bread
Provides a crisp, absorbent base that holds the melted marrow.

The step that matters

Baking until the marrow is thoroughly melted. Marrow is mostly fat, so it melts into a spreadable layer when heated. Too little heat leaves it solid, while overheating can make it run off the toast and scorch the bread.
