Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash and peel the mushrooms.

  2. Place them in a fireproof baking dish.

  3. Sprinkle lightly with coarse sea salt, black pepper, shallot, parsley, and Parmesan cheese.

  4. Thickly cover with breadcrumbs and add small pieces of butter on top.

  5. Bake in a moderately hot oven at 350°F (175°C) for about 15 minutes.

  6. Serve in the dish.
