What each ingredient does

Sugar
Forms the sweet, brittle toffee body as it cooks down into syrup and caramelises.
Almonds
Add crunch and a nutty flavour that contrasts with the brittle toffee.
Cream of tartar
Its acidity helps prevent the sugar from crystallising, keeping the toffee smooth.

The step that matters

Boiling the syrup to deep amber. Sugar moves quickly from pale gold to bitter and burnt once it caramelises. Stopping at the right colour gives a clean, brittle toffee with rich flavour, while stopping too early leaves it soft and pale.

Swap the almond

How well each one fits the dish's main ingredients (sugar, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
