Toffee, Treacle

Ingredients

Directions

Make the toffee

  1. In a saucepan, combine the brown sugar and vinegar, and heat until dissolved.

  2. Add the treacle and boil until it reaches 247°F (large ball stage).

  3. Remove from heat, then stir in the bicarbonate of soda dissolved in a little hot water, the butter, and almond essence.

  4. Boil again until it reaches 290°F (small crack stage).

Set and serve

  1. Pour the mixture into a greased tin.

  2. When partially set, mark into bars or squares, then break into sections when fully firm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Treacle
Provides the dark colour, rich flavour and chewy body of the toffee.
Brown sugar
Adds sweetness and helps the mixture dissolve and caramelise as it cooks.
Vinegar
Adds acidity that works with the bicarbonate of soda and softens the sugar crystals.
Bicarbonate of soda
Reacts with the acid to release gas, making the toffee lighter and less dense.
Butter
Adds fat for a smoother texture and a richer mouthfeel.

The step that matters

Boil again until it reaches 290°F (small crack stage). The sugar concentration rises as water boils off, so the final temperature sets the hardness. Going too far gives a bitter, burnt toffee, while stopping short leaves it soft and sticky.

Swap the almond

How well each one fits the dish's main ingredients (sugar, butter, vinegar):

  1. Almondthe original
  2. Sesamefits about as well
  3. Soybeanfits about as well
  4. Peanutfits less well

Fit is the average pairing score against sugar, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
