Beetroot Pickle

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beetroot

  1. Wash the beetroots well, taking care not to break the skins.

  2. Bake the beetroots in a 350°F (175°C) oven for about 1.5 hours.

  3. When cool enough to handle, remove the skins and cut the beetroots into 1‑inch slices, then place the slices in jars.

Make the pickle

  1. Boil the vinegar, horseradish, pepper, and allspice together, then let the mixture cool completely.

  2. Pour the cooled mixture over the beetroot in the jars.

  3. Cover the jars with parchment paper coated on both sides with egg white and store in a cool, dry place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beetroots
Provide the main body, earthy sweetness and deep colour of the pickle.
Malt vinegar
Adds sharp acidity that gives the pickle its tang and helps preserve it.
Horseradish
Contributes pungent heat and sharp aroma that cut through the sweetness of the beetroot.
Whole black pepper
Adds a warm, sharp spiciness that infuses into the vinegar as it is boiled.
Allspice
Adds warm, aromatic notes that flavour the pickling liquid.

The step that matters

Cool the boiled mixture completely before pouring. Hot liquid poured over beetroot keeps cooking the slices, softening their texture and dulling their colour. It can also stress glass jars and cause cracking.

Swap the allspice

How well each one fits the dish's main ingredients (beetroot, malt, vinegar, pepper, horseradish):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
