What each ingredient does

Sour apples
Provide tartness and pectin that thickens the chutney as it cooks down.
Malt vinegar
Adds acidity that balances the sugar and helps preserve the chutney.
Moist sugar
Adds sweetness and helps preserve the chutney while softening its texture.
Raisins
Add chewy texture and concentrated sweetness.
Onions
Add body and savoury depth as they soften into the mixture.

The step that matters

Sieving the cooked mixture. Passing the soft cooked fruit and onion through a fine sieve gives a smooth, even texture. Skipping or rushing it leaves lumps and fibrous pieces, so the final chutney is coarse rather than uniform.

Swap the onion

How well each one fits the dish's main ingredients (malt, vinegar, apple, sugar, raisin, ginger, mustard):

  1. Shallotfits better
  2. Beetrootfits better
  3. Capsicumfits better
