Explore the science

What each ingredient does

Fresh milk
Supplies the liquid and fat that form the body of the gruel.
Liquor pancreaticus
Enzymes that break down starches and proteins, partially digesting the mixture.
Bicarbonate of soda
Raises the alkalinity of the mixture, helping the enzymes work.

The step that matters

Holding the temperature while peptonizing. The enzymes in liquor pancreaticus work within a narrow temperature range. If the mixture cools or overheats during the 30 minutes, digestion slows or the enzymes are damaged, so the gruel will not be properly peptonized.
