Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eel
Gives the broth its main flavour and body as it simmers.
Cold water
Extracts flavour and gelatin from the eel as it slowly heats.
Onion
Adds savoury sweetness and aromatic depth to the broth.

The step that matters

Simmer gently and skim. A gentle simmer keeps the broth clear, while a hard boil emulsifies fat into it and clouds the liquid. Skimming removes foam and impurities that would otherwise spoil the flavour and appearance.

Swap the onion

How well each one fits the dish's main ingredients (parsley, clove, pepper):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against parsley, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
