What each ingredient does

Mutton
Provides the meat and rich flavour that gives the broth its body.
Pearl barley
Thickens the broth slightly and adds a soft, chewy texture as it cooks.
Carrot
Adds sweetness and aroma to the broth as it simmers.
Onion
Adds savoury depth and aroma to the broth as it simmers.
Celery
Adds aromatic flavour to the broth as it simmers.

The step that matters

Add the pearl barley about 1 hour before serving. Barley keeps absorbing liquid and swelling as it cooks. Added too early it can turn soft and cloudy, and added too late it stays hard and gritty.

Swap the onion
