Almond Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almonds

  1. Blanch and skin the almonds, then chop them coarsely.

  2. Bake the almonds in a 350°F (175°C) oven until light brown.

Make the cream

  1. Dissolve the gelatine and sugar in 3 tablespoons of water.

  2. Whip the cream until stiff, then add the dissolved gelatine and cooled almonds.

  3. Mix all ingredients together lightly.

  4. Pour the mixture into a prepared mold and refrigerate until firmly set, about 40 minutes.

What each ingredient does

Cream
Whipped to form the light, airy body of the set dessert.
Gelatine
Sets the whipped cream so it holds its shape when chilled.
Almonds
Provide the main nutty flavour and a bit of texture.
Sugar
Adds sweetness and balances the richness of the cream.

The step that matters

Whipping the cream until stiff. Cream must be whipped to the right stiffness so it holds air and keeps its volume. Overwhipping can turn it grainy or buttery, and underwhipping leaves the mixture too loose to set well. Gelatine should be dissolved fully and cooled slightly before folding in, so it does not seize the cream in threads.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
