What each ingredient does

Loaf sugar
Forms the brittle, glassy toffee base as it cooks to a caramel syrup.
Almonds
Add crunch and nutty flavour to the set toffee.
Water
Dissolves the sugar so it can cook evenly without crystallising.
Cream of tartar
Acid that helps prevent the sugar from crystallising into grainy toffee.

The step that matters

Boil until a deep amber syrup forms. Sugar cooked past the right point turns bitter and burnt, while stopping too early leaves a soft toffee that will not set firm. Watching the colour closely matters.

Swap the almond

How well each one fits the dish's main ingredients (sugar, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
