Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Anchovies
Provide the main flavour and the body of the dish.
Frying batter
Forms a crisp coating that browns and seals in moisture during frying.
Lemon juice
Adds acidity that brightens the rich, salty flavour of the anchovies.
Shallot
Adds a mild sharp aroma that softens during the marinade.

The step that matters

Fry in hot fat until nicely browned. If the fat is not hot enough, the batter absorbs oil and turns greasy instead of crisp. Too hot and it browns before the fish cooks through. Drain well after frying so the coating stays crisp.

Swap the shallot

How well each one fits the dish's main ingredients (parsley, lemon, pepper):

  1. Carrotfits better
  2. Shallotthe original
  3. Spinachfits about as well
  4. Okrafits about as well

Fit is the average pairing score against parsley, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
