Apple Dumplings, Baked

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Peel and core the apples, then fill the centers with currants.

  3. Roll out the pastry thinly and cut it into rounds large enough to cover the apples.

Assemble and bake

  1. Place an apple in the center of each round, wet the edges, and press the pastry gently over the top.

  2. Place the dumplings, join side down, on a baking sheet.

  3. Bake for 20 to 30 minutes.

  4. When nearly done, brush lightly with water, sprinkle with moist sugar, and return to the oven to finish baking.

Serve

  1. Serve hot or cold.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Short crust pastry
Forms a sealed case around the apples that holds in filling while baking.
Apples
Provide the main filling, softening as they bake into a tender, moist centre.
Currants
Add small pockets of sweetness and chew within the apple centres.
Moist sugar
Sweetens the top and helps the pastry brown when sprinkled on near the end.

The step that matters

Wetting the edges before pressing the pastry over the apple. Water helps the two pastry edges bond so the seam stays closed; without a firm seal, filling can leak out during baking.

Swap the currant

How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Currantthe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
