Beef, Baked

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove bones from the beef, brown it, simmer for at least 2 hours, strain, season, and set aside as gravy.

  2. Cut the beef into thin slices and slice the vegetables thinly.

Assemble

  1. Spread a thin layer of mashed potatoes in a pie dish, then layer with beef, carrots, onions, herbs, salt, and pepper.

  2. Repeat layers until the dish is full, then pour in gravy until it reaches the top.

  3. Cover with mashed potatoes, smoothing the surface with a knife to resemble a crust.

  4. Optionally brush the top with beaten egg or milk for a better appearance.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) for about 30 minutes until browned.

  2. Serve remaining gravy separately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Roast beef
Provides the main meat filling, already cooked, so the bake mainly heats and combines it.
Mashed potatoes
Forms soft layers and a top crust that browns in the oven.
Gravy
Adds moisture so the layered filling stays juicy rather than dry.
Onions
Add savory flavor and aroma to the filling as they soften.
Carrots
Add sweetness and a tender texture to the layers.

The step that matters

Cover with mashed potatoes, smoothing the surface. A smooth, even potato layer seals the filling and helps the top brown evenly in the oven. Gaps let the gravy bubble out and the surface dry or scorch unevenly.

Swap the onion
